Les Rabassaires: Quebec truffle farming takes root thanks to a passionate family!
Maude, Jean-Simon and Hugues took the plunge into the world of truffle farming in 2019. They embarked on this project by creating the first truffle farm in Quebec called Les Rabassaires .
The three entrepreneurs demonstrated inspiring curiosity by daring to embark on this ambitious project. They decided to actively participate in the expansion of the truffle industry in Quebec by planting 1,700 truffle trees on their family farmland. Their project is an inspiring example of perseverance and innovation.
Once production is fully underway in a few years, the trio hopes to harvest between 60 and 300 kg of truffles per year. They even plan to welcome visitors and develop a range of truffle-related products.

CINDY AND DENIS' DREAM: THE LES GROS CAILLOUX TRUFFLE FARM
In just a few months, Cindy and Denis have accomplished a real feat by creating a magnificent 1.5 ha high-density truffle orchard. They have carefully planted nearly 1,650 truffle trees, 50 American hazelnut trees mycorrhized with white truffles, as well as a mixture of red oaks, bur oaks and Norway spruce trees mycorrhized with Appalachian truffles.
They have the desire to produce a truffle in a forest-covered environment, getting as close as possible to the natural ecosystem of the Appalachian truffle.

Unlike a classic plantation, they opted for a random arrangement , without spacing or rows, in order to create a more natural forest visual when mature.

Grand Belle-chasse

The Market Gardeners of Grand Bellechasse
Maxime and his associates' project is a unique market gardening project. Domaine Le Grand Bellechasse was created in 2021 and includes 1,125 truffle trees. It is composed primarily of oaks and hazelnut trees, but also Norway spruce, to offer several varieties of truffles.
But this project isn't limited to truffle production. The Grand Bellechasse team has also planted a wide variety of hot peppers and herbs to produce unique herbal teas. Their goal is to provide local, high-quality, and innovative products to consumers in the region.
With passion and determination, they demonstrated that it was possible to diversify agricultural production while bringing flavor to the Quebec table.

Olilo Farm: diversity, local development and innovation.
Véronique La Haye and François Arsenault, owners of Ferme Olilo, have been drawn to the concept of food self-sufficiency since acquiring their property in 2005. Their land, rich in agricultural possibilities, inspired the development of an innovative project that reflects their vision, an idea that took shape during their discussions with Truffes Québec.
Fond of gastronomy and committed to the principle of local purchasing, Véronique and François decided to create a truffle orchard of more than 1,600 trees, based on three guiding principles: diversity, the development of local products, and innovation. This is demonstrated by the presence of ten varieties of truffle trees, planted as part of an experimental approach and the collection of scientific data, all while applying the principles of permaculture.
