With Maude Lemire-Comeau at the helm of Les Rabassaires and Jérôme Quirion as a mycological pioneer, the province is transforming into fertile ground for these underground treasures. From Saint-Léonard-d'Aston to Témiscouata, dozens of truffle fields are emerging, driven by a contagious passion and a touch of science. While Quebec truffles may not yet grace our plates, they are slowly simmering underground. One thing is certain: the Appalachian truffle hasn't said its last word!
