MAKING WAY FOR THE NEXT GENERATION

This year, the Compton Public Market is hosting a Next Generation Kiosk, a space entirely dedicated to new small and micro agri-food businesses. Conceived as a real springboard for entrepreneurial succession, this kiosk will allow a different guest producer to be highlighted each week throughout the season. “We want to offer a showcase for these people so that they can become known to the regulars of our market,” emphasizes Garance Philippe, the general manager of Comptonales, the organization that oversees the public market’s activities.

The initiative is powered by Caisse Desjardins des Verts-Sommets de l’Estrie.

At the opening of this season, the kiosk welcomed Les Truffettes, a company from Saint-Denis-de-Brompton, specializing in truffle cultivation. “We are really fortunate to have received the invitation to participate in this market,” says Jessika Lessard-Voisard, Communications Coordinator for Les Truffettes and Truffes Québec. “It’s a beautiful place and the clientele we find there is very curious.”

Indeed, passersby were surprised to learn that these mushrooms are grown on lands in the Eastern Townships. “People often associate the product with Europe,” notes Ms. Lessard. “In the past, we made a lot of educational efforts to promote our cultivation and, little by little, it is becoming more and more recognized. Here, I was asked how they are grown. Those who wanted could taste truffle oil and mayonnaise. Moreover, we have the only 100% Quebec truffle products.”
