It's official: truffles grown in Quebec have nothing to envy their European cousins! A study conducted by Laval University reveals that the Appalachian truffle (Tuber canaliculatum) has a unique aroma, composed of more than 30 volatile compounds, including six exclusive to this species.
A discovery that scientifically confirms what enthusiasts already suspected: Quebec truffles are a gastronomic treasure in the making. Thanks to pioneers like Jérôme Quirion, local truffle farming is taking root... and promises to thrill taste buds here and elsewhere!
