Long the preserve of the finest European restaurants, truffles are finally finding roots in Quebec. Driven by enthusiasts like Maude Lemire-Comeau, who founded Les Rabassaires , the province's first official truffle farm, this rare and precious crop is slowly but surely taking root in our region. Thanks to pioneers like Jérôme Quirion of ArborInnov, nearly a dozen truffle farms have already been established, heralding the emergence of a promising local industry. Patience is key, because truffles are not cheap... but they could soon become a gastronomic gem of our own.
